How can I update the KNIME version bundled with the Schrödinger installation to use the latest release?

You can do this from within KNIME. Start KNIME, then go to Help → Check for Updates and follow the directions. You might have to run the update process more than once to get the latest version, e.g. KNIME 2.4 updated to KNIME 2.5, then to 2.5.2.
