When I have a protein-ligand complex in the workspace is there an easy way to unclutter the Workspace? I only want to see relevant information such as the ligand, a small surrounding part of the protein and distinctive rendering.

Yes. You can apply a Workspace style, which has settings for atom visibility and display style. The Workspace style tools are accessible via the Edit toolbar. Click on the Style toolbar button in the Edit toolbar to apply the style.
