Is there a way to customize the font size of all the menus and displayed text in Maestro? The font of the project table entries and menus are too large.

From Suite 2011 on, you can select the font, size and style for different parts of Maestro in the Preferences panel, under General → Application fonts and Workspace → Fonts, then restart Maestro to use the new font size.

In Suite 2010, you can select the font size in the Appearance tab of the Preferences panel, and restart Maestro to use the new font size.

In suite 2009, you can change the default font by using the maestro.sty file with the desired font and font size. You can copy it from $SCHRODINGER/maestro-vversion/data/res/ and modify it. Save it as maestro.sty in $HOME/.schrodinger/maestro90/ (Linux) or %APPDATA%\Schrodinger\maestro90 (Windows) and restart Maestro.

For more information on customizing Maestro appearance, see the Maestro User Manual, chapter 12 "Customizing Maestro"; particularly section 12.3.1 "Visual Style Resources".
