Abstract:
As the need to develop new food ingredients, products, and food packaging materials is increasing, food science researchers need to be innovative, now more than ever. Modeling and simulation, alongside AI and machine learning, have been used in various industries for decades and have helped save time, money, and provide unique insight to produce development and refinement. We will discuss what the role of these computational tools is today, and how they can be leveraged in the future to streamline the research and development process.
